Considering that we are still in the month Ramadan, the holly month in islam, there are a lot of recipes online with proposals what to cook for iftar, the first meal breaking the post after the sunset. In Bosnia, a lot of food, especially that popular for after fasting meals is very caloric and strong. In these summer months this can make your stomach feel heavy, which could lead to the harder fast next day.

This inspired me to put together one combination which reminds a lot to something very tasty and unhealthy but in fact it is not.This time I took an example of the meal everybody loves – fried chicken with mayonnaise and fried potatoes. For sure there are a lot of healthier options out there but lets be realistic – mostly people will reward themselves with food they like and it tastes good to them respectively they are used to its taste.
For chicken replacement comes for the crust and way of baking. Crust is made of almond/flax seed meal but in fact it can be any kind of nuts meal. This is low carb option so those who are on keto or Atkins diet will love this recipe.

To avoid additional calories, and especially negative aspects of frying chicken chunks are baked in the oven, on baking paper without additional oil for frying.

For mayonnaise replacement I have chosen avocado, which contains a lot of healthy fats and Omega 3 acids, mixing it just with one tbsp mayo for whole portion, for the taste.

Finally, instead of potato fries some additional protein in form of chanterelle mushrooms with onions and a bit of cooking cream.

The point of the recipe is to find a middle way between very unhealthy but popular option and replace it with not ideal, but optimal replacement meal which taste good while significantly improves nutrition values and decreased negative aspects of original recipe preparation.

Fried chicken replacement – chicken pieces with almond meal, flax seed meal and spices.

1 kg chicken cut into chunks

for the crust:

– 1 cup almond meal

– 1 cup flax seed meal

– 1 tsp cayenne pepper

– 1 tsp black pepper

– 1 tsp onion powder

-1 tsp salt

– 1 tsp red paprika powder

– 1 egg

Mix all the dry ingredients together.

Preheat oven on 180 degrees C. Prepare baking plate by placing a piece of baking paper on it.

Mix the egg. Soak chicken pieces into the egg mixture and then into the crust mass. Put the finished pieces on the baking paper. When done with all bake for 20-25 min, decreasing temperature on 150 degrees C after 10 min.

After baking sprinkle lemon or lime juice on.


Mayonnaise sauce replacement – avokado cream with a bit of mayonnaise

1 avocado

1 tbsp mayonnaise

1/2 cup water

juice of 1/2 lime (or lemon)


cayenne pepper

Place all the ingredients into a blender and blend until smooth. When done add black and cayenne pepper, according to your taste.


Fried potatoes replacement – Chanterelle mushrooms in light cream

1 onion

400 g chanterelle mushrooms

1 cup water

1/2 cup cooking cream

1 spoon coconut oil

1 tsp salt

1 tbsp dried parsley

Slice onions and chanterelle on tiny pieces. Melt the coconut oil and fry onions until glassy. Add the mushrooms and stir for 5 min. Add half of the water and mix on medium fire. Add second half and after it vanishes almost completely add the cooking cream and the salt. Put it off the fire and add parsley on the top.

For drinks choose water with taste of vegetables, fruits and spices instead of sugar juices. This one has ginger ice cubes, lime pieces, lemon pieces and cucumber. You can add what ever you like or have in the fridge!
