Living totaly or mostly without gluten can be challenging when it comes to the typical breakfast treats we are used to like waffles. These gluten free waffles with almond flour are great substitute and very fast to make. I make them in 15 min, usually on weekends but sometimes also during the week,when we lack ideas for breakfast.
You should have a waffle pan for this. I got my from my late mum who was oppsessed with home appliances among many she bought me, I have also this one. It remembers me on her, that is why I especially enjoy making waffles.

serves: 4 waffles
persons: 2 – 2 waffles per person
Gluten free waffles with almond flour
1-1/2 cups almond flour/meal
½ teaspoon baking soda
½ teaspoon fine sea salt
2 large eggs
¼ cup milk
1 tablespoon agave syrup (or maple syrup, or honey)
coconut oil for brushing waffle iron
It is easy (or at least I make it easy) – mix all the ingredients together and bake! One – one and a half big spones goes for one waffle on my round waffle iron – if you have a different one you have to measure differently.
I made them this time with bananas and Greek yoghurt – you can make them any way you like. They go good also with more agave syrup on the top or other fruits.
This combination makes cca 300 kcal per person (2 waffles)
