This recipe I have made a while ago but never had really chance to post. Today is Sunday so perfect day for some food inspiration.
This cubes are heaven! Very crunchy, sour sweet and satisfying…We served them with a scoop of home made coconut icecream (will try to post recipe soon) and nothing else we needed. It is good to keep them in the freezer and keeping on the room temperature 5 minutes or so before serving…really, heaven!
First “dough” layer
1 cup hazelnut meal or grinned hazelnuts
1 cup oats
2 tablespoons coconut sugar (I used syrup)
2-3 tablespoons coconut oil
*Mix ingreadients together, press into lined pan and keep in freezer
2 cups any berries of your choice (I used Bosnian mountain blackberries)
1 teaspoon vanilla powder
a squeeze of lemon juice
2 spoons coconut oil
1/3 cup chia seeds
*blend in high speed blender all the ingredients but chia seeds – mix in chia seeds with a spoon – leave until it gets a jam consistency
Take the dough mass from freezer and top it with your jam mass
Put back to the freezer and work on your
Second dough layer:
1/2 cup oats
1/2 cup almond meal
pich of salt
1 teaspoon cinammon
1 teaspoon ginger powder
3 tablespoons coconut oil
2 tablespoons coconut sugar
juice of half of lemon
Mix all the ingredients with spoon and top it over after having your lining pan in the freezer for few hours…Its best you keep all together in the freezer over night.
Take out 15 min before serving – after 10 min cut all in cubes and serve with ice cream. ENJOY!
