On the days, when I have no time to think about an ideal protein or fibre rich dinner but have to make pasta for kids, I choose to eat some home made fresh and light sauce with them. It makes all the difference. Keeping an eye on the portion and choosing the right sauce can make even pasta a good dinner.

6 tomatos – medium size
1 small onion (peeled)
1 small carrot
2 tablespoon tomato paste
1 garlic clove (peeled)
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp fresh lemon juice
1/4 teaspoon salt
Depending on how powerful is your blender, you should cut vegetables in smaller pieces. After blending them cook on low fire for around 45 min. Make sure to mix it all the time as it does stuck to the pan quite fast.
The sauce is done when the spaciness of onions is not there anymore.
